到了冬天,很多人喜欢用保温杯泡茶,这样可以随时喝上一口热茶,不过保温杯泡茶真的好吗?

CCTV《生活提示》通过安徽农业大学茶与食品科技学院进行了相关实验,实验人员选用了同等分量的两份绿茶,分别放入保温杯和玻璃杯中,对冲泡5min、30min、1h、2h,3h后的2份茶汤进行分析。© 由

实验发现,茶叶在保温杯里长时间的高温闷泡后,品质会明显下降,汤色黄变、香气熟闷、苦涩度也有显著上升。茶汤中的活性物质,如维生素C、黄酮醇类也有所减少。不仅是绿茶,其他的茶类也不建议用保温杯冲泡。© 由 浦东时报 提供

除了茶水,豆浆、牛奶、奶粉等高蛋白饮品,也不建议使用不锈钢保温杯长时间存放。

实验发现,热奶粉、热牛奶放入保温杯7小时后,细菌数有明显变化,到12小时则是显著增加。这是因为豆浆、牛奶等富含营养物质,长时间在合适的温度储存,微生物就会大量繁殖,饮用后极易造成腹痛、腹泻等肠胃不适症状。© 由 浦东时报 提供

这首先要说一说保温杯的工作原理。不锈钢保温杯是双层结构,内胆与杯身两层不锈钢之间焊接结合,抽成真空,杯内热力不易被传送出容器外,达到一定的保温效果。© 由 浦东时报 提供

GB/T 29606 —2013《不锈钢真空杯》中对无内塞保温杯的保温效能要求

使用过程中,保温杯的不锈钢内胆直接接触存放的冷热水、饮料等液体,长时间浸泡碱性茶叶、水、碳酸饮料和高温液体的频率较高。这些液体容易对内胆及其焊接部位产生腐蚀,从而影响产品的使用寿命和卫生性能。所以应选用耐腐蚀性较强的不锈钢材料。

GB/T 29606-2013《不锈钢真空杯》中要求不锈钢保温杯的内胆材质:“应选用GB/T 3280中规定的12Cr18Ni9、06Cr19Ni10牌号奥氏体型不锈钢材料,或耐腐蚀性能要求不低于上述牌号的符合GB 9684等相关国家标准的其他不锈钢材料。”

GB/T 3280-2015 《不锈钢冷轧钢板和钢带》

304钢是最常见的不锈钢之一,被称为食品级不锈钢,正常接触水、茶、咖啡、奶、油盐酱醋等等都没问题。

316钢则是在此基础上的进一步升级(控制杂质比例、加入钼),耐腐蚀能力更强,除了油盐酱醋茶以外,各种强酸强碱,它都可以抵挡。316不锈钢主要用于食品工业、钟表饰品、制药行业和外科手术器材,生产成本较高,价格也更高。

316L钢是316钢种的低碳系列,除与316钢有相同的特性外,其抗晶界腐蚀性优。
